How do you marinate your chicken?

I've got some frozen chicken I want to use on the George Foreman grill, but I've never made marinated chicken before (if you just stick it on, it doesn't have much flavor). I've been eating it with sauces on the side, but I want some real marination action on my food. So, after googling, I realized there are about 2.6 billion ways to marinate it, but I didn't know if they were any good or not.

So - how do *you* flavor your chicken? I want some good ways that people have actually tried :)
 

Italian salad dressing is a reliable method, though mixing it with a little cream of celery soup might be a good idea too.

Chicken doesn't marinate well in my experience. It just works better brush something on as it cooks. It just doesn't pull in flavor from marinades like beef does.

usually i set out the frozen chicken the night before. once it is thawed, i put the chicken in a ziplock bag with whatever marinade i want. i usually use teriaky (sp?) but i'm currently using jerk chicken tonight/all day today. after it marinades throughout the day in the fridge i throw it on the grill.

depends on how im cooking it, itf its on the grill it gets BBQ sauce

if im satueeing it garlic and some "Poultry Magic" rub and its GTG

olive oil, hot sauce, white wine, sugar, salt, black pepper, garlic paste

Edit: all of you saying chicken does not grab onto the flavor of the marinade - "you SUCK at cooking"

the emerils original essence is good too, tastes great in/on pretty much anything you cook.

i dont usually marinate chicken; i usually have something else with it or i just season it prior to cooking with whatever i feel like at the time, thyme or some chili flakes is always good along with the salt and pepper.

I do, however, almost always marinate red meat. I usually find a recipe on foodnetwork.com i want to try and go by that, been good so far :)

decided to do breakfast-for-dinner tonight. OJ, canadian bacon, and (burnt :() eggs. I'm going to have to unthaw the chicken, I'll look for hte essence stuff tomorrow after work. thanks everyone!

  • cut up my chicken
  • toss chicken in along with marinade (A1 cajun style) in tuperwear bowl
  • eat after a day or so... although its a big bowl of chicken so it lasts a while.
  • ....
  • profit!

Aahhh! Jerk Chicken! Yum!

You can get a greeat jerk spice mix from The Spice house in Milwaukee. Usually, the spices come with the recipe for the marinade. If memory serves, it's the mix, lime juice, orange juice, soy sauce, vinegar and a little oil. Mix it up, pour it over the chicken, stuff it in the fridge for at least 24 hours and throw on the grill. you could probably use a Foreman thingy too, but better over charcoal. It's awesome!

italian dressing works well.

make sure you score the chicken some. Add some fresh rosemary/cayenne for a kicker.

if you still have canadian bacon, what you can do is butterfly the chicken breast, put some canadian bacon and cheese in the middle, fold back up and top with some italien bread crumbs and you have chicken cordon bleu.


If you find chicken tough to marinade, might I suggest pounding the chicken breast until its flatter so flavor absorbtion increases.

you can use chicken instead of veal for a scallopini dish. Just pound chicken breast until its flat. Top with a mix of breadcrumbs and parmesan cheese and parsley, pan fry it.

Make a sauce of lemon + butter and capers.

If you have quarters instead of boneless chicken breast, I like just topping with BBQ sauce or maybe soy and chili flakes and throw it in oven. Quarters will probably take too long on george forman.

Caesar salad dressing works.
Stick it in for a bit, then cook on the grill.
It doesn't have an overpowering flavour, keeps the chicken moist, and makes it taste of something.
