I'm having a bbq tommorrow, and I'm wondering if i should go to the mexican carniceria, or to costco and marinate the meat myself. If i decide on the latter route, how should i prepare the meat?
Steaks = rub with salt/pepper/olive oil an hour before grilling time and let them get to room tmep, then grill!
Ribs = boil and oven ahead of time, fridge, then grill again for that second coat of bbq sauce
