How do you make your Mac & Cheese?

Listen, I have seen sooo many people make there mac & cheese and come up with yucky crap, it kills me! One friend mixed the milk, cheese and melted butter together, then poured it on the mac. Then it would all run to the bottem of the pan. So you were left with yellow staind noodles that tasted like...noodles.

Now myself, I find the best way to do it is to mix the butter in with the hot noodles, then mix the cheese in, it will stick to the noodles, then just a shot of heated milk for texture. Not to much milk, else it will wash the cheese off the noodles.

Viola'...a great mac and cheese. Of course a little curry, or a dot of cumin helps too:) Sliced hot dogs or diced ham mixed in rule too!

The secret is not over-milking. Just like you said, it kills any attempt at making this tastey treat. Being a college student, I've kind of mastered the art.

The best way is to add Kraft cheeses slices to the noodles after ya drain them.. Then add tuna.... I think its lunch time.. Gotta go

MMmmm... macaroni and cheese...

I use the same method, xraymongral. It works well.

If you mix a little corn starch with the milk it will become thick and coat the noodles nicely.

I buy Kraft Shells 'n' Cheese or whatever they call it now. The cheese is already in liquidy form so you just squeeze it out of the package and it comes out perfect. A bit more expensive than the regular mac n chesse, but worth it IMHO.

When I lived in the dorms my freshman year we wouldn't keep milk on hand but would stock up on el cheapo mac n cheese. Stuff doesn't taste too good when you make it right, even worse when you make it with water and no butter.. yech. Never again.

I moved on to a much tastier dish - hamburger helper :)

A little more expensive, but it feeds me for 2 days.

I actually make a cheese sauce by cooking margarine and onion, adding flour then milk, stirring the whole thing till its thick like gravy, add grated cheese till its melted, then pour on cooked noodles.
Put in a casserole dish.
Then I mix 1 cup grated cheese with 1/4 c bread crumbs and sprinkle on mac and cheese...
Bake in oven on 375 for 25 mins.

This is one of my hubby's favorites. Completely homemade and scrumptious!
I also add veggies to the mac and cheese for variety. Peas, carrots or zuchinni all taste great in the casserole!

Homemade is the only way to go.

Elita, what the quantities to make the sauce? Sounds real good, I might have to wash some dishes to get a clean pan to make that!

I cook the noodles first, then I make my cheese with Velveeta, some milk, and some of that powdered stuff. Mix it all up and Bam! Mac & cheese.

BTW ran out of milk one day so I ended up using soybean milk. It was ... interesting.
