How do you make meatballs?

I followed cookbooks instructions and mixed ground beef with 1 egg, but they broke apart and didn't stay balls. What should I do? Any good tips?

I use ground pork instead of beef, and mine stick together perfectly.

Pork, the other white meat.

When you use wet ingredients like eggs you need to add bread crumbs as a binder.

Btw,you can get really creative with meatball mixes and seasonings :)

the one thing you need is breadcrumbs. progresso makes a nice one. but you can always make your own. the eggs need something dry to help it make the bond. adding shallots and freah garlic gives it a nice touch also. by the way i am a chef. if any other cooking questions are welcome. :) hope i helped

How I make meatballs.

Step 1 - Buy pre-made meatballs from the meat department of local grocery store.
Step 2 - But them in the oven till dog starts salivating and hanging out in the kitchen
Step 3 - consume meatballs, give a couple to the dog.

Best meatballs I had were when I was dating an italian girl from south philly. Her mom showed me once how to makem, and here ya go.

1 or 2 pounds of ground 30/30/30 meat...(Beef,Veal, & Pork.) Get it at any grocery store.
1 or 2 eggs, depending on how many pounds of ground meat. (general rule is 1 egg per pound.)
well chopped or diced garlic bread for consistency.(or italian bread crumbs)
2 finely diced cloves of garlic
Add diced 1/2green pepper and 1/2 onion to taste.
pinch or two of Salt & Pepper.

Mix meat, eggs, garlic, onions, peppers and bread(or crumbs) by hand in a bowl, adding garlic bread and salt and pepper until meat can be made into balls. Consistency should be like when you make hamburgers. once you have all your meatballs made, brown them in a frying pan with olive oil, until they have a brown coating around all or most of the meatball. Once all are browned, place them on a tray and bake them for 3/4 to an hour at 350. ~NOTE~ Be sure to watch that the meatballs dont bake too long, its a judgement call, one that can make the meatball dry if baked too long. Once baked, drop in already warmed sauce and stew for about 15-20 minutes. Then serve.

My mom uses ground beef - seasoned with pepper, salt, and some other stuff. (One key ingredient is soy sauce) Then she scoops it with a spoon into a big pot and lets it cook.

AHHHHHHHH bread crumbs!! I didn't think it was that important so I left it out, hahaha thanks guys.
