you're wasting really good meat if you let anything steak or better go past medium rare!

Have you never heard that not everyone is the same? Some people don't like things that way...it isn't wasting crap if that's how they like them. There is no right answer to this, it's opinion.

My personal opinion is that it should be well done, cooked thru completely, no color, no blood. I think it tastes fine that way. I've had it rarer...all the way down to rare. Anything less than medium well and I nearly puke, and I don't think that medium well tastes as good as well done.

I have a friend that likes to say:
"I want you to lead the animal to the grill, have it recoil from the heat, then serve it to me on a plate."

Me, I prefer medium rare.

Same here. However, I do have a growing appreciation for a medium-to-medium-well filet mignon from a reputable source (not Applebee's or the like). mmmm.

...is Black and Blue even legal to serve to anybody besides carnivorous zoo animals? lol. Seriously tho, what's the appeal here?

I like mine medium: cooked just enough to make it not be disgusting and still be plenty juicy. I like to dip my steak fries into the juice. :p
