How do those poker tournaments work?

If they did, and somebody formed a three of a kind with aces (with impending flush), wouldn't the audience "ooooh" and "ahhhh" in unison? If they did, the players would know something is up, especially if it's down to 2 people and one of them is bluffing with nothing in hand.

So, what do they do with the audience?

They usually have a judge on hand to issue a gag order.

I'm sure they don't see the cards or else a crooked player might have people in the audience giving nonverbal signals.

No, the audience does not see the cards. Those cameras on the table are only used for the TV rebroadcast.

The WPT tournaments you see on tv have already happened a month or 2 before you see them. You can find the results of upcoming episodes if you wanted to.
