How do I use statistics to determine the accuracy of the population?

I am wondering how I can use statistics to determine the accuracy of the project I am undertaking:

Basically, the project consists of the following:

1)Look over 5000 parts in the warehouse and determine if they are ?Current? or ?Not Current?
2)The 5000 parts have to be manually entered into SAP where the database will return their part status ? since lots of human intervention is needed, it also increases the chances of error
3)How do I use stats to determine the accuracy of my classification?

I learned in stats that if I take a random population of n > 30, and calculate how may errors I made in the sample, it will reflect the accuracy of the population (5000 parts)

I can?t seem to figure out to use standard deviation because my part classifications are non-numerical measures.

Anyone can give me some tips?
