How do I unattach a domain?

yeah, after a while 1and1 will email you saying 'wtf are you not pointing your domain at us anymore' so remember to delete the domain profile at 1and1.

Yep just change or delete the DNS name servers.
 
erm, then go to your registrar and see if they have settings for parking your domain. so for the time being it'll point to some search spam page instead of whatever you had before.
