How do I turn off MS Word auto-correct?

Like it adding a ` to the E in CAFE, or changing one word to another because that's what it thinks I mean?

Go to Tools, Options, and then the tab for "Spelling & Grammar" (in 2003, anyway). Also, you might want to add common (to you) words to the existing dictionary, so that Word will recognize them as "valid".
