Some people recomend putting them in the freezer first to make the adhesive brittle, a fine bladed knife should be enough to pry them off--most manufacturers skimp on the adhesive so it shouldn't be too hard.
If you put the Video Card in the freezer make sure you leave the chilled card in a room-temperature room for a day or so after you remove the ramsinks to avoid condensation on the card when you plug it back in.
