How do I record audio from select DVD chapters?

I have a Rammstein concert DVD sitting here and I figured it would be a great idea to record a few of the chapters into an audio format so I could listen to them in my car.

Is there a simple way of doing this?

rip the dvd to harddisk
use dvd2avi to extract and decode the audio to regular wav
use cooledit to do whatever you want with the wav
burn to audio cd
or encode to mp3 using lame and burn mp3 to cd

there is a utility (software) you can download that will rip the audio out of a DVD (you can select the quality of the audio, such as CD quality). I have used it, and it works. you do need a dvd rom to play the dvd on your computer. sorry, but I don't have the name with me now, I will look it up when I get home and repost it.
