Next time you're at the store, pick up a digital kitchen thermometer. It's great for stuff like poultry, pork, and fish, where you want to know it's cooked fully. If you get one with an alarm, you can set it to go off when the meat reaches it's correct temperature, taking out all the guesswork :D
