If it's an Athlon based system, dual channel will mean next to nothing. Statistically, it may be nothing (between 0 and 4%). Unless you have integrated graphics. If it's a P4 based solution, dual channel will make a much bigger difference.
Then do as bacillus suggested and use cpu-Z. On the memory tab it will tell you if you're running in dual channel mode. Usually the BIOS POST screen will tell you too.
