how do i get the itunes mini player to stay in my taskbar?

Do you mean where you can change songs and what not from the task bar? If so....
1. right click in the Windows task bar
2. go to toolbars
3. click iTunes

Now open iTunes select a song or something then minimize iTunes and you should be able to change, pause, stop, adjust volume of songs from the toolbar.

in addition, you need to go to Edit->Preferences->Advanced->UNcheck "minimize itunes window to system tray"
