And have them be seen in my user cp?

I don't see the option. I loved this aspect on an past forum I was on
 
User CP -> Edit Options -> Default Thread Subscription Mode

You probably want the "No email notification" option. This subscribes to a thread, but doesn't email you about it. "Do not subscribe" would be the no-subscription option.
