My g/f gave me her old ipod video which has about 500 songs and a few videos and pictures on it. If I plug it into my computer, how can I sync it and add my music to it without losing all her stuff?

You can set up the iPod so that you manually manage its contents. Then you should be able to add content to it without a problem. You won't be able to add her songs/videos/pictures from the iPod to your computer without third-party software.

When you hook it up to the computer if it asks you if you want to erase and sync click cancel. Then change the settings on the iPod's Summary Tab in iTunes to "manually manage music"

All the music on it will be safe and you can add your own.

Perfect, got it working, thanks. This will be much easier than using third-party software to backup all her stuff.
