How do e-mail headers work?

Your email program writes the headers and sends them along with your actual email. The headers contain information such as who is sending it, what time you sent it, where it's going, what program was used to create the email, and things like whether you want a read receipt sent, and what format the email is in. Along the way, servers also attach other headers to indicate what servers were used to pass the email along (such as when you use a forwarding service). Some mail servers also attach the IP of the source of the email.
