How do artificial preservatives work?

Potassium sorbate, sodium benzoate, sodium nitrite, et cetera.

Do they kill bacteria? Remove oxygen? Hinder growth? Why are they so harmful?
 
Potassium sorbate is naturally occurring, although in the quantities needed for food preservation it is created synthetically. It stops mold and bacteria growth. I have never heard of any health risks related to its use.

Sodium benzoate is a poison that kills all bacteria. I believe that it is used when the pH levels of the food are too low for Potassium sorbate to be effective.
