Outside New Orleans, most cajun/creole restraunts seem to be in mall food courts. Every single one I've seen was owned and operated by Chinese people. 
Often times they are next to a Chinese fast food restraunt, and sometimes they share items. i.e. you can get lo-mein with your bourbon chicken at the cajun place, and spicy cajun potatos with your general tso's chicken at the chinese place.
I'm a single guy who can't cook, so I've eaten in many a mall food court.
Anyway, what's up with this? Is there some cajun-chinese connection I'm not aware of?
This has got to be the first instance of an ethnic business being dominated by a (very) different ethnic group.
