how come continental drift charts and animations show them as they are now

Some places were under water like China(shells are found there dating to 500 million years old) and the state of Georgia(shark teeth can be found there).
They all show the continents as if none of them were below the ocean.
 
For clarity's sake, obviously. Were they to show them under water it would get very confusing.
