if they list the manufacturer's part number, you should be able to look it up on their site.

Look if it has the 32Mx64 or 16Mx64 or 64Mx64 etc....
Then see if they got a picture of the memory. Multiply #chips by the 32, 64, or 16.

Usually 256MB and above have 8 chips at least.

256MB 32Mx64 would be single sided. 8 32MB chips
512MB 32Mx64 double sided 8 32MB chips per side
512MB 64Mx64 single sided 8 64MB chips

Check at the manufacturer's site. Because I looked at Newegg and there is wrong for some.

Anandtech has an article (June 2003) saying that double-sided RAMs perform better than single-sided ones for 875P chipset. And it says the best config is to have 4 identical double-sided sticks. And 2 single-sided sticks perform significantly lower. Is this info credible?

This is not right.

32Mx64 means 256MB no matter single side or double side, how many chips.
64Mx64 means 512MB no matter single side or double side, how many chips.

For example:
KVR333X64C25/512 - Part Detail
Description:
512MB 333MHz DDR PC2700 DIMM CL2.5
Detailed Specifications:
Standard 64M X 64 Non-ECC 333MHz 184-pin Unbuffered DIMM (SDRAM-DDR, 2.5V, CL2.5, 400mil, TSOP, Double-Sided, Gold)

How can u tell if a RAM is double-sided?
See it or check the product spec. Don't just look at the ??x?? number.
