how can i hook up my Playstation 2 to my PC?

Get a TV Tuner with S-Video input (or Composite RCA if you don't want to get the PS2's S-Video cable).

Hook up the PS2's S-Video (or Composite RCA) to the TV-tuner. Done.

Alternatively you can get a PS2 VGA box...but that's probably more expensive though at $60 US, and if you get the TV tuner, you could hook up a coax cable to your TV tuner as well and watch some TV on the monitor if you ever wanted.

The PS2 VGA box is going to be the best quality, followed by S-Video, then Composite RCA.

I use an old Happauge TV tuner card with composite rca caples. Tuner cards can be found for cheap, but so can VGA boxes.
