For example, i want my main site to be jmhorowitz.com, no problems there.

However, i would like the subdomain; gallery.jmhorowitz.com to point to my zenfolio account, jhorowitz.zenfolio.com

Zenfolio mentions something about a CNAME, but i wasn't sure how to properly set it up...

Domain is registered at Godaddy, backend is running Direct Admin.

where is the DNS server? That is what you need to have control of. If you have DNS at godaddy, then it is in a FAQ here.
If it is hosted at a typical WHM/cpanel all-in-one machine, it is a bit more problematic.
For your case I would suggest using outside DNS, such as zoneedit or one of the many others. If you are not familiar with setting up your own zones, get some help here or at the DNS site.
That will give you the fine control to point mail.url.com to one server, pics.url.com to another, and so on.

i believe my dns server is hosted at the directadmin because i can see where one would add CNAME, etc...

I just don't get how to use it 🙂

Thor86...He would only use host headers if he was hsting a subdomain on the same server. He is trying to point to a site on another server.
