It's on the top of the engine, what would be the best method to change it out... Should I drain the whole radiator (into what, a bucket?) or just drain below the hose?

Any other general tips?

I'd just pull the hose off.. let the fluid spill into a bucket, replace the hose, and top up the rad. if the fluid is getting old, might as well drain it all out while you're at it.

If the top hose is leaking than you should look very closely at the bottom hose also. If you have time and a place to work on it then I'd recommend just going ahead and replacing the bottom hose while you are changing them.

Yes, you can collect the radiator fluid into a clean bucket and reuse it.
