The T-bird 1.2 ghz is about $400 more at P@radise (I agree their prices are a bit out of date), so surely I will save a little bit going to the cheapest shop in Hong Kong for each part.

I live in Sha Tin aswell, which is a bit of a distance from Wan Chai.
 
Hi 14k, it might be worth buying ram from a trustworthy place because I have doubts about quality. I bought hyundai 128 ram from GCT computers(SSP), then another stick from Jumbo computers(mongkok) and a third one from somewhere in mongkok comp centre(sorry,forgot name)but I noticed that the GCT piece had two rivets in the centre which separated the ramchips with a gap in the centre, whereas the other pieces didn't have them and the chips were evenly spread. Not sure what impact there is because they weren't mine. Is this description rubbish? sorry😕
 
Minor design changes like the ones you have descrbed make no impact to performance.
