Homemade Sausage

Anyone have good homemade sausage recopies? Going to make some next weekend since I have a meat grinder, casing stuffer and some casings.
Have never made it before, so any suggestions from those that have are welcome.

Be careful about getting into starting a sausage hobby, people who are serious about it tend to wind up on terrorist lists. But good for you if you proceed with this.

No recipes, but if you need a suggestion for where to get some of the best stuff you'll ever taste, then place an order with these guys.

Wow, wiki makes sausage making seem scary. Too little Nitrate, and you die from a Botox poisoning. Too much, and you die from nitrate poisoning. Sounds like you need to make a 100lb batch of sausage to make sure you're safe.

little pork fat = tough and dry

and uh fennel seeds make it italian
