Homemade Mac & Cheese = WIN!

Of the 4 cans of condensed milk used, accidentally using 1 can of sweetened condensed milk = fail.

I didn't catch it until I poured it in the cheese sauce mix and it came out like yellow goo. I thought that with all the extra milk and cheese, you wouldn't noticed but yeah....you definitely noticed. It was like macaroni and cheesecake. It was edible after you got used to it, but not recommended.

* Slightly under-cook 1 pound of pasta (penne is my favorite)
* Grease casserole dish with butter
* Fill casserole dish 1/3 full with pasta, throw in a couple pads of butter and scatter some mozzarella and Velveeta cheese
* Repeat last step until casserole dish is full
* Top with moderate layer of shredded mozzarella
* Bake until golden brown on top

Trust me. Simple, cheap, and extremely tasty.

If you want to make a different meal out of it, just skip the Velveeta and add half a can to a can of pre-made pasta sauce with either sliced pepperoni or cooked hamburger meat and diced onions.

That sounds pretty healthy. Maybe I'll modify the recipe by adding a stick of butter on top.

Add some bacon, with the full pan of grease, for an extra healthy treat.

Not everything has to be about health. If you feel bad about eating it, go for a bike ride after. ;)

It's something I've used for years. I use it for the cheese sauce base. My mac & cheese is similar to what you would get at Boston Market.

Honestly when making it at home I'm all about easy. Kraft mac n cheese prepared (I use a dallup of sour cream instead of the butter), add some extra shredded cheddar, throw it in a dish with broken up Ritz on top, bake till golden...yum.

home made mac and cheese is awesome. consider putting it in a veggie roasting tin and tossing it over some coals for extra win.

even more win with a bacon-infused cheese sauce.

I used a foodtv.com recipe by butterball Paula Deen and my girlfriend thought it was the best mac and cheese she had ever had in her life.

Easy and quick to make, tastes good but not what I'd consider delicious. If you're going to make Kraft at least add some extra real cheese, a slice of American or a handful of a shredded 3 cheese blend makes it a lot better tasting. If you really want to kick it up, also dice up 2 steamed Nathans Hot Dogs in it.

Slowly stir in some milk or heavy cream. Now start stirring in some cheese. The more cheese you ad the thicker it gets. This is your extreamly basic cheese sauce.

Fill casserol dish with 1/2 of cooked pasta. layer with cheese. Put rest of pasta on top. Add the cheese sauce. Top with bread crumbs. Bake that shit until bread crumbs are toasty.

Enjoy the best mac and cheese you have had in a while.

My grandparents used to go up to Wisconsin every year, and buy a LOT of cheese and bring it back.. I've never tasted Mac and Cheese that good ever since. I'm not sure what cheese she would buy, but she also baked it with squares of cut up bread on top of it... oh...my...god!

This is similar to my recipe.

1lb. box of macaroni noodles
2 eggs
2 12 oz. cans of evaporated milk
2 tsp. powdered dry mustard
1 tsp. salt
1/2 tsp black pepper
1/2 tsp. Tabasco (optional)
16 oz sharp cheddar
8 oz. Parmesan cheese
8 oz. chopped Velveeta

cook the noodles, and mix the remaining ingredients (except for the cheese). Pour on top of the noodles, then stir in the cheese. You can add a tbs of butter to the noodles before adding the mixture to keep them from sticking together.

Bake it for 20 minutes at 400F and you have awesomeness.

Topping (if making casserole style)

1 1/2 c. panko bread crumbs - these are the best bread crumbs ever.
4 T. butter
1/4 tsp. salt
a few dashes of paprika

Fry them over medium heat until well browned, then top the mac & cheese. Bake for 20 minutes at 400F.

Yum.

old school recipe:

2 cups macaroni
3 tblsp butter
3 tblsp flour
2 cups milk
1/2 tsp salt
dash pepper
2 cups shredded cheese
1 tomato sliced

boil pasta then drain. Melt butter and blend in flour. Add milk. Cook and stir until thick. Add seasonings. Add 1 1/2 cups of cheese and stir till melted. Place macaroni in greased baking dish.

Pour sauce over macaroni. Salt the tomato slices and arrange them on top, pushing one edge into the macaroni. Top with remaining cheese.

Bake at 350F for about 30 minutes. Sprinkle with paprika.

My mom used to make a homemade cheese sauce out of a simple roux, sliced cheese, milk, and paprika. She used to serve it on broccoli but it makes a great Mac and cheese too. You can replace the processed cheese with any good melting cheese. As simple as KD but a thousand times better.
