This is likely the last homebrew report for yoyo's wedding beer....

Matrimony Pale Ale (just in case batch #260013 fails):
20 # Pale Malt
1.25 # Special B
.5 # Carapils

Mashed at 151F.

2 ounce Target hops (7.5 aa&#37😉 @ 60 minutes
1 ounce Cascade @ 10 minutes
1 ounce Cascade @ 2 minutes

OG 1.047

Yeast: Wyeast 1056 (American Ale)

This beer rounds out the wedding selections to:
IPA (10 gallons)

The idea is to have 3 different styles on tap. I hope the IPA and APA are different enough. Will dry hop the APA with Cascade hops.

I might do a cider yet, but I think I'm probably done. Wedding is coming up pretty quick.

Now that the major stress of moving is mostly behind us, we'll be able to concentrate on wedding stuff again 😀

This makes me want to get back into home brewing in the worst way, I really loved the hobby but for many reasons had to put it on ice for awhile.

From what I remember, a Kolsch is one of the more difficult brews to nail perfectly, is that correct?

Did you dry hop your IPA by chance?

Also noticed you used Cascade hops, that was my favorite for Pale Ales.
 
re: Kolsch question. I find this style pretty easy, although i'm no perfectionist. Basically, you need two things: less is more mentality, and a good Kolsch yeast. Patience doesn't hurt either.

I am not going to dry hop the IPA. I tasted it last night and it is good, but by no means a blow you mind good IPA. Should be a crowd pleaser. I'm saving the dry hopping for the Pale Ale... yes with Cascades... You want that citrus- grapefruit- aroma in that style.
