Home wired network advice? Help!

I know this sort of question is brought up often, and I have looked over several similar posts but most reference a smaller scale installation and I think the scale of what I'm doing in a home warrants a new post in case of newer technology, methodologies, or unique ideas from the other members.

I am looking to upgrade my house to be fully wired. There are a number of people that I will guess that will say "Why not wireless?" to which I could give any number of answers, but the short and simple answer is security and 'Because I want to!'

So I have 10 rooms and 46 drops planned between them, the two highest are the two living rooms at 8 drops each to accommodate all gaming and streaming needs. I plan on using Cat 6 solid (still checking to see if plenum is needed to meet local codes) for my drops as to hopefully future-proof the installation for 10G. While I don't plan on running drops right now I think I want to leave room in the closet to later accommodate a possible IP security cameras on the panel/switch, lets say at least a dozen. This will bring up the total drops to 58, but more could be tossed in as new things come to mind. I plan on doing this all myself with the help of friends so really I'm only looking at material costs, no labor.

My question/problem is this:

I am having trouble knowing the best way to go about wiring all this in to a central location. I am fairly sure I want to be looking at patch panels and switches, but sizes, types, rack, no rack, etc it's all a bit daunting. With roughly 60 drops I'm not sure the best approach to take with all this. I have a networking degree so I understand the basics but I've forgotten much of what I've learned about networks of this size as I've not put it into use for many years now.

I am hoping someone can suggest some solid setup's and equipment that doesn't break the bank. Also if someone could suggest some solid firewalls as well.
