I have a linksys wireless G router and wireless G pci and pcmcia cards in my laptop and desktop computers. Which channel should I select the wireless signal to use for maximum performance? Also, is there anything else I can do to help increase the connection speed?

There are no differences between the channels.

If you have interference in one channel you can switch to another one, otherwise it does not make a difference.

Unfortunately we can not OverClock the speed of light (which is the Speed of Electromagnetic propagation).

If you have Distance problems the following might help.

You might be able to get a program which scans all the channels and tells you which ones are best. My D-LINK Pocket PC card does this, of all things, but I haven't seen it for a desktop or notebook card...
