Home server and duplication

I am getting my home server in the mail and am planning on using it as a file server. I have a couple of questions regarding the duplication feature. I understand that you introduce drives to the server and it will add it to the pool and manage files for duplication as it sees fit. My question is if my server hardware failed, can i just take one of the drives and hook it up to my vista machine via USB and it will read the data properly? I'm planning on adding 2 1TB hdds and hoping that the OS will duplicate the files among the two drives.
 
To my knowledge, there is not a way to force specific data to be on specific drives. WHS goes through a whole balancing act of determining where to send things based on space and associated files, and it's not possible to stop that.
