Well, we know that G70 is going to be in the PS3 and I'm not sure about XBOX360, but I heard it might have the R520 core.

Anyways...

do you think it would be possible to mod the PS3 and/or XBOX 360 and have SLi in the CONSOLE?!

Maybe it's a little crazy ...

Without any driver support it wouldn't work.
 
Xbox 360 has R500, which is supposed to be more advanced than R520 and appear in PCs next year or so under the guise of R600.

And SLI is at best an inefficient hack to overcome the typical price/performance manufacturing progression. It's not meant for small, cramped, (initially) low-profit consoles.
