Help with new CPU - 6800/xeon/5820/6960x

Upgrading from 2600K. Need to go with 2011 socket.

What should I get for photo processing out of those? Seems like 6800/5820 are pretty much equal.

Should I look for any xeons too? Should I splurge for 5960x? I upgrade every 5-6 years, so possibly can add extra to get that 8 core one.

No gaming.

I'll go with Asus mobo, 64GB RAM, 750 ssd.

Anyone can advise? Also, should I drop air cooler for water? Corsair? Have not done water yet. Thanks.

Here's what I just did and i'm pretty happy so far. Bought a Asus X99E-WS/3.1 board, E5 1650v4 and 64GB RDIMM. I plan on running this till skylake-x and then buying a real server board for it (SM X10SRL-F or similar) and switching it all out, selling the Asus WS board and building a real server out of it. I was planning on building another server anyway.

I really see no problem with buying xeons for normal desktop use if you don't plan to OC, plus another side benefit is you get to run ecc memory.

Photo processing? You mean Photoshop? 6700K. Don't go 2011.
