Can anyone help me or suggest the best deal on two 4GB sticks of DDR3 to go with a mini ITX board, LGA1156, Core i5-750 CPU, there are only two slots, and I'm using this build for a portable VM server so I need 8GB RAM...

4GB sticks are so freaking expensive that like one in a million consumer would be willing to pay for it. They're generally left to enterprise-use.

YES, I am assembling the parts for my DFI P55 miniITX setup right now. I chose to go with 2x2GB of 1600MHZ. I had a X58 setup with 6GB of RAM and I never came close to even using 4GB. I think I'll be happy with "only" 4GB until prices for the 4GB sticks drop.

I'll be using a i7 860 and a HD 5770 on that board. Should be fun!

It's going to be an expensive scenario for you if you require 2x4 GB as those aren't mainstream/common yet...

Good luck with them though.
