I just got a new 26" LCD widescreen.

How do I set the VLC player so that my files are never streched?

I run 1920 x 1200 resolution. How do I know what resolution files I download from say torrents are in so that I can make sure I use the right setting?

Also, when should I use deinterlae and which method?

Are there any autosettings?
 
In VLC, if you double click the screen to maximize it will display the proper way. To see the resolution download gspot or use the "dimensions" option in windows explorer.
