PCGH did a little sample of 3 games using 25 cpu/gpu combinations. Interestingly, performance is different based on the game, the game's use of quadcore vs. dualcore, and competition between ati & nv in driver ability. Crysis doesn't benefit as much going from an Athlon xp 5000 -> Core i7 965 as it would going from HD4850 -> GTX285 Tri-SLI. Farcry2 loves going from dual --> quadcore CPU. Fallout loves both high end gpu and high end cpu equally.
Tests like this are very helpful to all of us! To sum it up: bottlenecks are definitely subjective. You will also want to consider ram, disk-subsystem, OS, resolution, filtering, game settings.
IMO, you can't lose with a Yorkfield, Deneb, or Core i7, with a current-gen multi-GPU setup (GTX200 SLI, HD 4800 Crossfire).
