Help switching to SATA Drives?

I have the ASUS A8V Deluxe mob. Currently with (3) IDE hard drives. One is for operating system and the other 2 for back-up. I want to switch over to 2 or possibly 3 SATA WD2500KS hardrives or even the Maxtor Maxline III line (not sure yet). I am a "NEWBIE" with SATA and know nothing about how to install the drivers and copy over my Operating System "Windows XP Pro" and applications. I want to avoid doing a complete new install. Just did one about 4 Months ago with the new mob and cpu. I have Drive Image 7.0 software and image copies of my "C" drive on my back up drives. Can you help me or point me to some articles on how to achieve this. I will not be running raid. My mob has 2x Southbridge Serial ATA with raid support and 2x Serial ATA Promise PDC20378 Raid controllers. I get a little confused with all the "raid" wording. As I previously mentioned I will not be running raid. Thoughts, comments GREATLY appreciated.

Why do you need to remove your existing HDDs?
Why not just add the new ones in for extra storage and keep the old ones there, meaning there's no need to fuss with copying OS across.
 
I was thinking there would be a performance advantage going over to SATA drives I mentioned? Current drives are (1) Maxtor 52049u4, (2) Maxtor 6y080l0 (3) WD1200BB. I believe these are somewhat outdated?
