Help starting my new HT system

Short version(I'm a length typer):

I'm trying to decide basically whether an AV (RX-V765) will be sufficient enough to run the 2 Monitor 70 Polk Audio speakers along with a center channel (probably from polk) and 2 surrounds (OWM 3 probably from polk as well). This will all be coupled with a powered sub too (probably from polk as well). Second option is to buy the R300s (suggested here) and let a sub handle the lows since I don't feel I can get the full effect of Monitor 70s running them only off the AV receiver in a 5.1 setup.

Alright, I've been planning on doing this for awhile as I got a couple years left in college and once I move out I want to be able to kick back in my own home and listen to a great home audio system. Nothing beats kicking back and watching a great movie and feeling fully immersed or just jamming out to some tunes. My first purchase was going to be Speakers. You may ask why not the receiver? I can't afford both and the system I have right now works as a unit so unless I could get both I might as well use what I have now.

I decided on getting the Polk Monitor 70 speakers. They look great, have great reviews, are kind of big but they are some sexy looking speakers. However, looking more into receivers I realized that none of these receivers actually put out something like 770 watts (yes laugh now but hey at least I didn't buy everything and then wonder why it sounded bad). My biggest worry would be under powering the speakers once I get my AV. I might possibly be running 7.1 and it seems like for a speaker that is rated to go up to 275 watts it'd be stupid for me to just power it off the AV. Would I need an amplifier if I was going this route? If so which ones are affordable that you would recommend as I certainly would go this way (the speakers look sexy, the response range is great, the price is amazing).

I also have the choice of going the R300s (recommended here). They are like 70 each at fry's and I figure an AV would have a much easier time powering those. I probably wouldn't even need an external AMP.

I figure you'll want some knowledge as to how I would want to use my setup. Well currently I have the Z-5500 from logitech and I love it. I want this setup in the end to destroy that speaker system. I wanted to replace it after Logitech gave me the run around or 3 months to replace it while it was under warranty. I'd use this setup for movies, video games and music. Music is usually for parties at the moment. If you've heard the Z-5500 I want deeper bass response and more of it(this will be achieved with a sub anyway so you probably just wanna ignore this part) and better mids/highs (These don't sound that great with the z-5500 but they aren't a music speaker). I may be over killing with the Monitor 70 so I guess I want to hear what you guys have to say. I'll probably save more money here listening to your input so that I can finish my car setup (gotta buy a JL amp + 2 sets of 6x9s) but anyway lemme hear what you have to say. Thanks in advance!

Edit: 2 questions, I can set the high pass filter separate for each group of speakers right? How do you set up an amplifier with your speakers and still maintain some type of balance.
