First, I know very little about RAID, so please bear with me, just had a few questions before I get started.

I'm currently using a seagate SATA 160GB drive (7200.7) with 8 mb of cache. I just ordered the 320gb Seagate from the newegg deal this weekend, which has 16mb cache (it's a 7200.10). Will I be able to use these drives together in a RAID setup?

My motherboard is a K8N Neo2 Platinum

Yes, but for best results, should you want security and RAID 1, they should be the same size. For RAID 0, they can be different, but the smaller drive rules. Do some Googling and learn about all variations including JBOD. The decider is what your objective is.
