Help on settings in a dual monitor configuration.

I have two monitors plugged to the same vid card. My problem is I can be playing a game on one monitor but when I wanna do something on the other monitor like change an itunes song or put a different web page up, it brings the game down on the other monitor as if it alt tabbed. What can I do so it wont do this?
