Should I get Corsair ddr2-667 Value Select (2x1gb) -or- G.SKILL 2GB (2 x 1GB) F2-6400PHU2-2GBNR DDR2 800 (PC2 6400)???

If your running dual channel with a dual core chip, you wont need more than DDR2667. With dual channel memory, you need to muliply the RAM speed by two, so that would be 1334 which is already faster than the 1066FSB your CPU takes. Depending on price, going with 800 would not be necassary.
 
Not to steal the thread, but does the memory have to specify dual channel, or will any set of two identical modules work, assuming the motherboard supports dual channel?
