Does anyone have a delicious favorite dinner recipe that's relatively easy to make? The tastier the better... I'm open to suggestions, please include cooking directions/a link to the recipe if possible. I'll try it out tonight and will return with a post-meal review afterwards, thanks!

What ingredients do you have handy Dezign?

Here's one of our favorite chicken dishes-this is healthy but hearty enough to feed to a man:)

Line a pan with foil,set your oven to 350 degrees

Chicken breast deboned and skinned,cut into strips

sprinkle with black pepper,paprika,basil,oregeno
add 1-2 sliced onions,a cup or so of fresh mushrooms, slather with chopped garlic



you can also add green,red peppers,green beans,brocoli or yellow peppers,fresh sliced carrots,small red skin potaoto's just wash and pierce them,they cook in their skins and absorb the juices so nicely that you won't need to put butter on them!

Take a can of cream of mushroom,cream of cheedar or cream of brocoli soup(I use the fat free kind) put into a bowl mix with half water/half non-fat milk, pour mixture over chicken and veggies.Bake for about one hour,turning chicken once.


Btw,you can also add rice to this or make egg noodles to go with it.
It's delicious:)

how about cola chicken wings. basically cook wings till half done then pour in 1/2 can of coke. cover, simmer and will glaze itself.

Hi Geekbabe... yum, that sounds amazing! Quite healthy and pretty easy to make, too... do you serve it on a bed of pasta, rice, or just by itself? I'm going to go buy the ingredients after work, in a few minutes... all those ingredients should be pretty easy to find and relatively cheap. :)

I had no idea you could do that. How does it taste? Does it get super syrupy sweet?

We had this dish for dinner tonight and I served it just with the red skin potato's(we try to avoid heavy carbs at our evening meal)

This dish is GREAT because almost any veggie goes well with it Dezing,I've thrown leftover eggplant,sliced zuccuni etc in this and it all tastes great.It's a healthy meal and a good way to clean out the fridge of veggies that might go bad.

:confused: Do you like even taste the flavor of the food without the spices and veggies and garnishes coming into the mix? Man keep it simple... PAM oil spray...chicken...hot pan...black pepper...salt...pasta.

I also do pan fried,simple dishes using either Pam or a bit of olive oil.My man lifts heavy and sometimes we prefer a heartier dinner.Also when you eat as much chicken/turkey as we do,jazzing it up can mean the difference between staying on a clean diet and breaking down and eating total crap just because you're sick of the boring sameness to foods.steamed veggies are great but not 24/7.

Man if it were up to me. I'd bread some anchovies (properly cleaned and gutted) in a corn flour mix and pan fry them slowly with butter. Pour some lemon juice on them son's of guns and you've got the perfect appetizer that can give chicken wings a run for the money.

Second while that is being prepared, boil some angel hair pasta. Whilst making the salad (mostly coarsely chopped cucumbers, tomatoes, parsley, onion [red if you like] with "REGULAR" olive oil, extra virgin is too strong, season to taste and lemon juice AGAIN)

Thirdly... geekbabes recipe doesn't sound all that bad, however skip on the turkey. They smell horrible and usually too tough. Chicken or veal (maybe even Venison) is a good choice.

I'd also propose a soup before the entree...usually there is no time left (but soup really helps soften up the tummy before a hearty mean)

Dessert... well microwave some brownies... scoop ice cream on top afterwards and sprikle crushed walnuts (pecans if you so desire)

Man all this talk about food... I better see what I've got in the fridge :)

Stir Fry in a Wok is extremely easy, healthy and fun. There are dozens of Stir Fry Recipes on the net. The only problem is the time consuming preparation: mainly chopping the vegetables.

Chicken Paprikash

Chop a boneless breast or two into chunks.

Dredge in a mix of flour, salt, pepper and hot hungarian paprika (I prefer Szged brand)

Brown in butter and set aside.


Chop one onion, a few cloves of garlic and one red bell pepper.

Sautee onion and garlic in butter until translucent, add pepper and sautee 5 min.

Add approx 1/4 cup paprika and sautee 2 min to unlock the flavor. Stir constantly so it doesn't burn (very important).

Deglaze pan with 1 cup white wine, beer, or chicken stock. (Deglaze = add liquid and scrape the stuff off the bottom to make a sauce)

Add chicken.

Add enough chicken stock to almost cover the chicken and bring to a boil.

Reduce heat and simmer uncovered until sauce thickens.

Serve over egg noodles, rice, dumplings, or whatever makes you happy.


Total prep should be about 15 min + another 15 or so to simmer. :)

Chicken & Spaghetti Squash

1 large spaghetti squash
2-3 boneless skinless chicken breasts
Matzoh meal or panko crumbs
PAM
1 jar roasted garlic tomato sauce
1/2 ball fresh mozzarella


Preheat oven to 375F
Cut squash in half, remove seeds, cover both halves with saran wrap, microwave for 5-10 minutes or until soft.
While waiting, bread chicken lightly with matzoh or panko, heat a pan and spray with PAM. Cook chicken until lightly brown (you don't need to cook through, just make crispy).
Spray 8" square glass baking dish with PAM.
When squash is soft and cooled, shred squash meat with fork into glass dish.
Pour jar of sauce over squash.
Put chicken on top of squash.
Slice mozzarella, put on top of chicken.
Cover with foil, bake 15-20 minutes or until sauce bubbles and chicken is cooked through.
