Help me migrate this RAID 1 from HDD to SSD

Alright, here's the layout:

Business PCs, we're using 300GB Velociraptors in RAID 1 right now (2 drives.) This is on an X79 board using the built in Intel RAID.

Want to migrate to some SSDs; 240GB Samsung 840 Pros.

For expediency, would like to just take the working installs of Windows 7 + programs and shuffle them to the new drives.

Was trying to use GParted live CD to copy data but have met limited success; 1, GParted flips out a little and tries to 'fix' the drives by relocating GPT tables, and 2 Gparted cannot move a 128MB 'msftres' partition that exists on the disks.

Initial attempts copy only the UEFI partition and NTFS partition; Windows is no longer bootable and I expect I need that msftres partition (if not more; I do not know where the Intel RAID info hangs out.)

I can shrink the NTFS volume on the 300GB raptors, making them fit the smaller Samsungs, but this is only part of the puzzle. Can you guys recommend a way to get the data down onto at least one of the SSDs? In which case I can let the Intel RAID rebuild to the second drive.

edit: Uh, migrate this to Operating Systems if it belongs there instead, sorry didn't know where to put this!

For 60 bucks and full support for cloning different sized HDDs and SSDs, UEFI, GPT, RAID, and >2TB; pickup a copy of Total Backup Recovery 9 Workstation. If you need support for Windows Server 2003/2008/2012 you'll have to spring for Drive Clone Server at 130 bucks.
