Help me hit 4.1~4.5GHz w/ i7 875k

Should be fine, that heatsink will get you past 4Ghz if the CPU can do it. Overclocking is not only about picking the best components its luck as well, each CPU is different. Hopefully your chip can do it.
 
i'm going to be reusing my sata 320gb hdd and put in a nice sound card too. will i be okay with the 750w psu? what if i upgrade the video card a year from now to a gtx 480, will that psu still be okay?

My 750 ran 2X280s.

PSU "requirements" are overblown.

No. My OCZ 1010 watt (a quality unit > 85% efficiency) was blown running 2 470's and an I7@3.6. So asking about a 750 watt psu on one 480 and an I7 is a good question.
 
let's say i have a:

i7 875k @ 4.5GHz
Asus P7P55D-E Pro
2x gtx 460 in sli oc'ed
8gb 1600 mhz
320gb sata
120gb ssd
7.1 sound card

will CORSAIR CMPSU-850TX 850W handle it smoothly

I Hope so. im going to run a system very close to that one on that PSU as soon as i get my second 460. Its currently running system in sig just fine, and my UPS is telling me in drawing about 500w under full load. So im thinking adding another 460 will be just fine.
