how can I connect a dvd player with HDMI output to an TV with DVI-HDCP?

Get a cable with HDMI on one end and DVI on the other, or if you have an existing cable, get the appropriate converter.

Since the pins are the same on HDMI and DVI, I think all the handshake business should work just fine.

Cables are one of the most profitable areas for retail stores. It's a shame so many people spend so much on them.
