Having a problem

I chose dark background and the text about PMs, polls, current users, etc is still black so I can't read it.

You'll need to go back into customize and choose the "I have a dark background" option, that should do it. If you can't see now to choose it, you'll have to reset to default first then re-select your options.

I reset to default and it still wont turn white .. wtf

It won't turn white by itself... which background do you have? If you can still read to make selections you need to choose DARK where it says "My background is Dark Light".

I know dude, I've been selecting dark the whole time.. that's the whole point, it doesn't turn white when I select dark!

Do you have a dark background by way of choosing a particular "color theme" or inidividually custom selecting background/font color/etc.?

I have default color scheme w/ #000000 as my backround (black).

Yep, I see what you mean now (tried it). The text on the background should be showing up as white but it isn't.

Until that is changed you might try the "Dark Night" color theme, it's pretty nice & the text will show up when you select that you have a dark background.
