Don't they use fermented tofu in Pad Thai? If so, I don't recall it stinking.

When I went to Taiwan, all the night markets smelled like stinky tofu. Personally I like all tofu except the hard ones, I prefer silken tofu.
I also tried pigs blood for the first time and it wasn't too bad. It was mixed with rice and then congealed on a stick, looked like a popsicle.

It's definitely not regular tofu. It brown in color with a hardened skin. Is it something different altogether?
anything will stink after a few days if it's wet like meat, vegetable and even your clothes!Originally posted by: dman
So what makes it Stinky?
IIRC, Tofu is just a soybased food product, right? I've made some soystuff that I liked, and even fried it, but, it wasn't stinky. I fear the stinky stuff.![]()

I've had it many times (hot & spicy is best methinks)...I think you'll probably find the best stuff in the US in LA. But...if you want the good stuff, you'll have to travel to China/Taiwan...hehe
And, they make 'stinky tofu' with uhm...directly translated, it starts as "oil tofu" which is then fermented (that gives it the smell) and fried. It takes quite a bit of skill to make the stuff...if you ferment the tofu too much, you get sick; too little and it tastes awful.
