Have some questions about Verizon FiOS

I'm thinking about switching to FiOS and I'm not quite clear on this but the Digital Adapter that connects to the tv, does it not let you have a programming guide that shows you what's on each channel?

Huh? You mean the cable box? I have an SD box and an HD DVR and both have the program guide, video on demand, etc.

The only way you won't have guide service is if you decide to use something other than their router, since the cable boxes access the internet via MoCA.

Well I'm looking online on their site and there's the boxes then for cheaper theres a thing called the Digital Adapter that you can watch tv on but doesn't give much details about it.

FIOS is all-digital, so you'll need the adapter at a minimum to see your channels. The adapter gets you the channels but basically nothing else. You'll need to get the set top box if you want the guide, OnDemand, etc.
