The first couple of seasons for EVERY Star Trek series sucked in the beginning. The original didn't become popular until it was actually cancelled. TNG certainly didn't become big until the 3rd season or so. And everybody thought DS9 and Voyagers first season 'blew' too (and they do if you actually watch it).

I think part of the problem a lot of people have is that Enterprise takes the "Star Trek Universe" and and shoots it out a torpedo tube, ruining the whole idea to making it part of the series.

What do you mean by that?
I haven't watched it, so i have no clue. But i remember all the arguments and complaints made about DS9 and Voyager in the beginning. DS9 because there's no action, it's all based on a outpost, and it's more a soap than real Star Trek of exploration. Voyager because things were so unrealistic, that people across the Galaxy can speak the same language, etc etc.

As for your language comment, they supposedly carried a "universal translator" that can translate any language, kind of like the Babel fish.
