I have many, many times. I was a ran a greek restaurant for awhile and cooked it daily..
Advise:
Cook slowly, very slowly. Lamb will become very tough if cooked at to high of temperature.
Make a sauce from the leftover juices, don't nasty mint sauce.
Lemon, water, oregano and garlic are all you need to make an excellent roasted lamb..

PM me if you want an exact recipe..

Salt man, you forgot the salt......and some pepper.

Other than that you've pretty much got it right. Cook very slowly and eat the skin (once it's cooked) 'cause that's the best part.

Most of the perverts on this forum would probably do "tenderize" the lamb before cooking it.

That said, goat is really good, never card for the sheep thing.

the "classic" marinade or rub or seasoning for lamb is olive oil, rosemary, salt, pepper, garlic -
apply liberally inside and out let marinate 24 hours in the fridge

optionally, with the tip of a small, sharp knife, cut many slits in the skin of the lamb. Insert the garlic slivers into the slits.

cook until internal temp is 150 (rare) to 160 (medium) degrees (use a meat thermometer)..let the lamb sit for 20 minutes before you start carving it up

a little slice of heaven....

Lamb is overrated. Goat meat is where it's at. Yum.

goat meat is a delicacy for some people on my block - one family cooked a whole one in their backyard.
luckily, they don't feel neighborly enough to invite me for dinner.

lamb, sheep, goat - no thanks.

SALT? On Lamb? No way!!!! Never. Lamb, if fresh and cooked correctly has a very salty taste to begin with. Adding more salt would ruin it by covering up the true taste..

All this talk about lamb made me hungry yesterday for greek so I went for lunch then again for dinner with my family.. Damn it was good, I miss not working in a restaurant anymore.. Anyone who has never tried greek food should try it, its the best..
